I have been wanting to try Yorkshire Pudding ever since I came to England and now I have come up with a recipe that is SO easy and really delicious, too! You can even take it a step further and make Toad in the Hole by adding a vegan sausage to each pudding before you pop them in the oven!

Here's what you need to get things rolling:

8 oz Self-raising flour
pinch of salt
1t Lemon juice (fresh if you have it!)
1/2 pt Vegan Soy Yogurt (unsweetened plain flavor)
1/2 pt Vegan Soy Milk (unsweetened)

Now, just whisk all that together and pour into a 4 cup pudding tray (make sure its greased first with vegan butter or a bit of oil). You can use a 12 cup tray if you like!

Bake at 180 C or 350 F until golden brown on top. They will sink a little in the middle when you remove them from the oven, but thats exactly what you want to happen, so no worries!

Good luck and happy cooking!
